Creamy Tuscan Chicken Thighs:

Ingredients:
– 4 bone-in, skin-on chicken thighs
– Salt and pepper to taste
– 2 tablespoons olive oil
– 4 cloves of garlic, minced
– 1 teaspoon dried Italian seasoning
– 1/2 teaspoon red pepper flakes (optional)
– 1 cup cherry tomatoes, halved
– 1 cup spinach leaves
– 1/2 cup sun-dried tomatoes, drained and chopped
– 1 cup heavy cream
– 1/4 cup grated Parmesan cheese
– Fresh basil leaves, for garnish

Instructions:

1. Season the chicken thighs with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs, skin side down, and sear until golden brown, about 5 minutes per side. Remove the chicken from the skillet and set aside.

2. In the same skillet, add the minced garlic, dried Italian seasoning, and red pepper flakes (if using). Sauté for about 1 minute until fragrant.

3. Add the cherry tomatoes, spinach leaves, and sun-dried tomatoes to the skillet. Cook for 2-3 minutes, stirring occasionally, until the tomatoes begin to soften and the spinach wilts.

4. Reduce the heat to medium-low. Pour in the heavy cream and grated Parmesan cheese. Stir well to combine and allow the sauce to simmer for 2-3 minutes until it thickens slightly.

5. Return the chicken thighs to the skillet, skin side up, and nestle them into the creamy sauce. Spoon some of the sauce over the chicken.

6. Cover the skillet and let it simmer for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

7. Once the chicken is cooked, remove the skillet from heat. Garnish with fresh basil leaves.

8. Serve the creamy Tuscan chicken thighs hot with your choice of side dishes, such as pasta, mashed potatoes, or crusty bread.
